Nova Scotia (Atlantic Canada) fishing trips?

I am moving to Italy in January, and i would love to actually experience atlantic fishing. Everytime i go over there (italy) they always tell me … “bla bla bla, you find the best/freshest fish here” … must be some complex or something. I know Canada, and Northeastern US, can kick the shit out of Italy when it comes to ‘best and freshest fish’ … i was just wondering if there were tours or trips offered for everyday people such as myself (deep sea fishing, fly fishing, …) in Atlantic Canada? or even Northeastern US?
Can anyone help?

There are a lot of deep sea fishing tours out of PEI, especially the north shore like North Rustico but relatively far fewer out of Nova Scotia ports. The NS boat tours tend to be more sightseeing oriented than fishing. Lots of whales, seals, and birds on their tours – which are really nice. Some guarantee that you will find whales. One I was on had whales swim right under the boat.
